Today thought of cooking Mutton Rogan Josh and the next thought was to make everyone know about this beautiful dish. Everyone knows that Mutton Rogan Josh is from Kashmir but do you know that this dish was made first by the Kashmiri Pandit's living in the valley.
Yes, the Kashmiri Pandits and they have been doing this awesome dish from a very long time with such beautiful perfection.




The dish is basically made to suit the weather of Kashmir which is cold most of the time. The word Rogan means 'Desi Ghee' which is used for cooking and Josh means that the dish will fill you with energy and heat which is suitable for the climate of Kashmir. Of course, Along with Rogan and Mutton there are lot of ingredients which goes in this dish.








The most important part of this dish is the super awesome Kashmiri Red Chillies which are known for their best colour in the world. These chillies are also a great source of Vitamin C and Vitamin A which are very beneficial for our immune system.




Apart from these red chillies the dish contains curd and lamb which is cooked under slow heat for a long time which yields a very soft and succulent meat which melts in the mouth. Also you cannot ignore the Desi Ghee and spices which make a wonderful harmony with mutton and chillies.


In spite of beautiful red colour and lots of spices the dish is not so hot as the chillies mostly provide the colour and are not so hot. This dish is a complete treat in itself with Roti, Naans or any other Indian breads.
This awesome dish is prepared by the wazas of Kashmir as a part of Wazwan which is itself a unique thirty six course meal which ends with Gushtaba.
